Orange Mousse
Makes 6 servings.
1 teaspoon gelatin
Juice of 6 sweet orange
Juice of 1 lemon
1 cup granulated sugar
1 teaspoon grated orange rind
1 pint whipping cream
1 tablespoon powdered sugar
1 teaspoon vanilla
Melt the gelatin in 2 tablespoons of cold water then dissolve it in ¼ cup of boiling water.
Add to the orange and lemon juice, the granulated sugar, and the rind.
Pour into a melon mold and then place in the refrigerator to start solidifying.
Whip the cream with the powdered sugar and vanilla. It should be runny enough to spread all over the orange in the melon mold.
Seal the mold with vegetable shortening and wax paper over the top.
Place the mousse in the freezer for 4 to 6 hours.
